How to make marmalade from scratch

With the highly anticipated release of Paddington in Peru on UK streaming services, people worldwide are embracing a newfound love for the beloved bear’s signature snack – marmalade.

Recent search data shows a 20% increase in online interest in marmalade over the past quarter, as home cooks look for the best ways to enjoy and make the citrusy delight at home.

From spreading it on toast to using it as a glaze for meats, marmalade is a versatile ingredient that brings a bright, tangy-sweet flavour to a variety of dishes. That’s why experts from HelloFresh Ireland are sharing some of the best ways to cook with Paddington’s favourite.

Hannah Duxbury, Head of Culinary, shares her insights on making the most of marmalade: “Marmalade isn’t just for breakfast. Its complex balance of sweetness and bitterness makes it an incredible ingredient in both sweet and savoury dishes. Try reducing it with balsamic vinegar for a rich sauce or mixing it into a marinade for grilled meats. The key to a great marmalade is using a mix of citrus fruits to achieve a depth of flavor.

According to Hannah, the best ways to cook with Marmalade include:

Classic Toast and Butter:
“A timeless breakfast staple, marmalade on warm, buttered toast is the perfect way to start the day.”

Marmalade-Glazed Chicken or Pork:
“Combine marmalade with soy sauce, Dijon mustard, and a touch of garlic for a flavorful glaze that caramelises beautifully.”

Baking with Marmalade:
“Swirl marmalade into cake batter, use it as a filling for pastries, or brush it over warm scones for a glossy finish.”

Cheese Pairing:
“Serve marmalade alongside sharp cheddar, creamy brie, or tangy goat cheese for a sweet-savoury contrast.”

For those who are looking to go the extra mile and create marmalade from scratch with the family to celebrate the new Paddington release, Hannah shares a simple recipe:

Ingredients:

  • 4 large oranges (or a mix of citrus like lemons and grapefruits)
  • 1 lemon, juiced
  • 4 cups sugar
  • 4 cups water

Instructions:

  1. Wash the oranges and slice them thinly, removing seeds. Keep the peel on for added flavour and texture.
  2. Place the sliced fruit, lemon juice, and water in a large pot. Bring to a boil, then simmer for about 40 minutes until the peels are soft.
  3. Add the sugar and stir until dissolved. Continue to cook, stirring occasionally, until the mixture reaches 104°C or thickens to a jam-like consistency.
  4. Pour into sterilised jars and let cool before sealing.
  5. Store in the refrigerator and enjoy!

With marmalade trending and Paddington’s charm winning hearts, now is the perfect time to rediscover this classic condiment. Whether store-bought or homemade, marmalade is a delicious and versatile addition to any kitchen.
