National Picnic Month: No-cook summer recipes to try

July marks National Picnic Month and what better way to celebrate than putting together some easy but delicious recipes.
With this in mind, Denby have come up with some ‘no-cook’ summer recipes to add to the picnic hamper this summer.
Seasonal Buddha Bowl with citrus and honey dressing

A delicious way to gather all the goodness from seasonal winter vegetables. This is what we used, but it’s a perfect way to use up any leftover veg or salad you might have too.
Serves 2: Ready in approx 1 hour
INGREDIENTS
- 1 large sweet potato, sliced
- 1 Avocado, sliced
- 1 Cooked Beetroot, sliced
- Cherry tomatoes, halved
- Radishes, sliced
- 1 small chicory
- 1 small carrot, julienned
- 1 spring onion, finely chopped
- 3 boiled eggs, halved
- Handful of fresh baby spinach
- 1 packet of cooked mixed grains, or similar
- Handful of frozen edamame beans, depodded
- Handful of frozen green peas
- Handful of sunflower seeds, or similar
- 1 Pomegranate
- 1 tablespoon olive oil
- 1 teaspoon of ground sumac
- A pinch of chilli flakes, to taste
- Freshly ground black pepper and salt to taste
Citrus & Honey Dressing:
- Juice of half a lemon
- Juice of half a small orange
- 1 tablespoons of runny honey
- 1 tablespoons of soy sauce
- Freshly ground black pepper and salt to taste
METHOD
- Heat the oven to 400F / 200C and prep a baking sheet with greaseproof paper.
- Peel the sweet potato and cut into slices about 5mm thick. Add the sweet potato to a large bowl and toss with the olive oil, sumac, salt, pepper and chilli flakes. Place on the baking sheet in one layer and roast in the oven for 25 to 30 minutes.
- Defrost the edamame beans and green peas by putting them in a bowl and covering them with boiling water. Leave for 10 minutes.
- To make the dressing, squeeze the lemon and orange juice into a jug. Add the remaining ingredients and mix together.
- Tear a 2cm opening at the top of the mixed grains packet and microwave as per the guidelines on pack. Empty into a large bowl and mix with the carrot, spring onion, pomegranate seeds and half of the dressing. Make sure you give it a good stir. Set to one side.
- Assemble in large Denby serving bowl. Mixed grains first followed by spinach leaves. Then top with piles of the other ingredients to make up your bowl. Drizzle over the remaining dressing and enjoy!
Beetroot & Feta Salad With Honey Mustard Dressing

A quick and easy lunchtime salad, that’s packed with flavour.
Serves 2; Ready in approx 20 minutes
INGREDIENTS
- 4 medium cooked beetroots, sliced
- 100g of feta cheese
- Radicchio leaves
- 120g of pea shoots, or similar salad leaves
- Handful of sunflower seeds
- Olive oil
- Freshly ground black pepper and salt to taste
Honey mustard dressing:
- Half a teaspoon of Dijon mustard
- Half a teaspoon of runny honey
- Half a teaspoon of white wine vinegar
- 1 tablespoon of olive oil
- Freshly ground black pepper and salt to taste
METHOD
- Combine the dressing ingredients in a jar and shake well.
- Place the radicchio leaves and sliced beetroot onto a Denby platter.
- Crumble over the feta and scatter with the pea shoots and sunflower seeds.
- Drizzle over the dressing and serve.
Chicken & Mango Salad Sandwich

Serves 4. Up your sandwich game with this sun packed treat.
Ingredients
- 1 pack of cooked roast chicken slices
- A small handful of fresh lettuce leaves
- 2 small mini cucumbers, thinly sliced lengthways
- 8 slices of fresh mango
- 2 tablespoons of mango chutney, spicy
- 2 tablespoons of mayonnaise
- 1 sourdough baguette stick
- Freshly ground black pepper and salt to taste
Method
- Cut the ends off the baguette and slice in half. Turn both sides upright.
- Spread mayonnaise onto one side of the baguette. Season with salt and pepper.
- Layer with the lettuce, cucumber, roast chicken and mango.
- Spread the remaining half of baguette with mango chutney and close the sandwich. Cut into 3 equal portions and set to one side.
- Wrap in reusable sandwich wraps and tie with string.
