Cucumber Salads are TikTok’s Latest Obsession

Summer days are the ideal time to tuck into new salad recipes and TikTok’s latest obsession is the perfect addition to your picnic or barbeque.
TikTok user Logan @logagm has amassed 4.2 million followers as a result of his quick and easy cucumber salad recipes inspired by Asian cuisine.

Some of his most popular videos have over 21 million views each, spreading the love for this summer-time superfood. The videos have led to increased demand for cucumber recipes with a 130% increase in Google searches for ‘how to make cucumber salad’ and a 70% increase for ‘creamy cucumber salad’ and ‘TikTok cucumber salad’ in the past week alone.
Now, culinary experts from HelloFresh Ireland have delved into the trend explaining the appeal of Logan’s Asian-fusion cucumber creations with tips to try it yourself this summer. Head of Culinary, Hannah Duxbury says:
“Logan’s videos are a masterclass in making a really simple ingredient into something totally inspiring. With high water content, cucumbers are the perfect summer food obsession to get into as they’ll help to keep you hydrated during those hot days.”
Inspired by Logan’s videos, Hannah shares some of her favourite cucumber salad recipes.
Creamy cucumber salad
Logan’s creamy salad with over 1.8 million likes incorporates greek yoghurt with the juice of roasted peppers, lemon, dill and more is the perfect accompaniment to a light fish dish. For a more tangy flavour swap out greek yoghurt for sour cream and add thinly sliced radishes for some added crunch.
Satay-inspired cucumber salad
This nutty cold cucumber salad is inspired by a classic satay. Logan’s version includes peanut butter, soy sauce, garlic, rice wine vinegar and more. Hannah recommends adding a dash of chilli flakes or sriracha for some extra heat and serving with fresh crispy spring rolls.
Vinaigrette cucumber salad
For a much lighter option, this final salad uses white wine vinegar, brine from jarred peppers or sun dried tomatoes, honey and a dash of salt and pepper. This option is a very versatile side salad to serve at your next barbeque.
